Zucchini bread loaf

Delicious recipe with natural and healthy ingredients to accompany any type of dish, whether sweet or savory.


1/2 cup quinoa or chickpea flour
1/2 cup almond or coconut flour
1 cup of grated zucchini
1 tbsp ground flaxseed
1 pinch of baking powder
2 eggs
1 pinch of salt
2 tablespoons of yacon syrup, raw honey or sweetener to taste
3 tbsp coconut oil
How to do it

In a bowl, beat the eggs and add the oil plus the sweetener.
Add the zucchini, mix very well
Add the rest of the ingredients, continue mixing and finally, place in a previously greased mold (the one you have at home).
Decorate on top with sesame seeds (optional)
Bake for 45 minutes at 170¬į C
Let it rest, unmold and portion. It lasts all week in the refrigerator. Or you can freeze it for more days!
