Ingredients:
½ cup brown rice
1 ¼ cups of water
2 cups of coconut milk
2 cinnamon sticks
3 to 3 ½ tablespoons honey (or sweetener)
Lemon or orange peel (without the white part)
Cinnamon powder to taste
1 pinch of sea salt
Optional:
Sliced or split almonds to taste
Raisins to taste
Grated coconut to taste
How to do it
In a small pot, heat the water with a pinch of salt. Cover until boiling.
Add the rice and wait for it to cook and absorb the water.
Add 1 ½ cups of coconut milk, honey, cinnamon sticks, lemon peel and stir.
Without covering the pot, cook over low heat, stirring constantly, for about 10 minutes or until you get a creamier consistency or the texture you like. You must be careful not to let it stick/burn.
At the end, add the leftover 1/2 cup of coconut milk and mix well. It doesn't matter if it has "a lot of milk" because as it cools, it will absorb more milk.
Remove from the fire and let cool. Put the rice in the refrigerator and once cold, serve with more cinnamon powder, grated coconut, raisins and almonds on top.
