We bring a spinach version of this side dish that goes well with any type of food so that you can accompany your favorite dishes, not only that but it is a rich source of antioxidants, iron and calcium.
Ingredients:
2 cups cooked brown rice
1 cup spinach
1 white big onion
2 cloves of garlic
1 tablespoon ghee or olive oil

How to do it
You should already have the brown rice cooked. This is prepared with 3 cups of water or broth for each cup of rice for 40 minutes.
Wash the spinach well, separate the leaves from the stems, cook them in hot water for 2 minutes.
Blend the spinach with 1/2 glass of water or vegetable broth and a pinch of sea salt.
In a pan we add 1 tablespoon of ghee or olive oil, 1 clove of finely chopped garlic, and the liquefied spinach, sauté for a couple of minutes.
We add the cooked brown rice to this mixture and stir until everything is well integrated.
You serve and add a few drops of lemon to give vitamin C and thus improve the absorption of iron from the spinach, also a handful of toasted walnuts, to give crunch and healthy fats.
Serve with vegetable protein such as mushrooms or tofu or animal protein such as organic chicken or trout.
